Ethiopia Sidamo Natural Chire Washing Station

Though coffee itself is ancient in Ethiopia, coffee farming is not. During the 9th Century coffee was cultivated in Ethiopia not as a delicious drink but as food. Coffee gathered, not grown, as it grew wild. It still to this day continues to grow wild in the highlands of Sidamo, along the edge of the beautiful Harenna Forest. Over 700 small coffee farmers in the area gather the red, ripe cherries to go to the Chire Washing Station to sun-dry the coffee cherries on raised patio beds. The natural process leaves behind rich fruit notes of boysenberry, blueberry and plum along with hints of milk chocolate and a heavy body.
