Bajawa is the capital of the Ngada Regency of Flores, where most of the island’s coffee is grown. In Ngada, there are 12 different co-ops that work together to grow 90% Arabica coffee comprised of three different coffee varietal hybrids: Catimor, Timor and Typica. The volcanic slopes and wet-hulled process give rise to a coffee with an emphasized body, muted acidity yet sweet cocoa, licorice, and cedar notes.
