The beans undergo a meticulous process that begins with careful hand-sorting and depulping. They are then fermented for 48 hours, enhancing their natural flavors before being washed and classified again in channels. The parchment is dried on raised beds for 12-15 days, ensuring the beans reach their peak quality. The result is a coffee that boasts tantalizing notes of lemongrass, raspberry, and peach, characterized by above-average acidity and sweetness.
