In the highlands of Northern Thailand, where coffee cultivation is relatively new but rapidly evolving, the Lahu people of Law Wu village are writing their own chapter in specialty coffee's story. At 1,700 meters, these mountains provide ideal conditions for exceptional coffee production: cool temperatures, natural shade, and unique terrain that contributes to slow, even cherry development.

What began in 2017 with just four farmers has grown into a nine-member cooperative, each dedicated to producing outstanding coffee through careful cultivation and processing. The village's location offers perfect conditions for natural processing, where coffee cherries dry slowly in their fruit, developing pronounced sweetness and complex fruit notes while maintaining remarkable cleanliness in the cup.

At our solar-powered facility, we've developed a roasting approach that honors this coffee's distinctive characteristics. Through careful heat application and development, we enhance its natural sweetness while preserving the delicate complexity that makes Thai specialty coffee unique. We find this coffee particularly expressive at light to medium roast levels, where its fruit notes harmonize perfectly with emerging spice characteristics.

In the cup, expect a coffee that challenges preconceptions about Thai origins. The initial impression is one of bright, citrus-like acidity with distinct lemon notes, complemented by pronounced red fruit sweetness. As the coffee cools, layers of complexity emerge – subtle nutty and herbal notes in lighter roasts evolve into rich spice and chocolate tones at medium levels. The body is fuller than typical natural processed coffees, creating a satisfying, well-rounded experience.
