The region's limestone bedrock creates mineral-rich soils with optimal drainage, while consistent temperature swings of 10°C between day and night slow cherry development, intensifying flavor compounds.
Our commitment to quality begins at origin with precise picking and processing protocols. Each lot undergoes sorting at three stages: first at the mill, again at import, and finally at our facility. This rigorous approach ensures uniform beans for even roast development, essential for highlighting the coffee's complex character.
Our roasting facility runs entirely on solar power, maintaining precise temperature control while eliminating carbon emissions. Small batch sizes allow us to carefully manage the roast profile, developing sugars while preserving the bright, clean acidity that makes this coffee distinctive. We log and analyze each roast, adjusting for seasonal variations to maintain consistency throughout the year.
